Spice Market Sweet Potato Hash
2 large sweet potatoes
1 ½ Cups black beans, cooked
1 red onion, diced
2 tsp. fresh ginger, grated
½ lemon, juiced
½ tsp. coriander
½ tsp. cumin
¼ tsp. black pepper
1 tsp. turmeric
1 ½ tsp. cinnamon
Peel and dice sweet potatoes and place with a little coconut
oil in a pot over medium-low heat. Cover with lid and let cook until tender.
Add onions and let cook until onions are at desired doneness. Turn off the
burner and add black beans and remaining ingredients. Stir until well combined.

It's quite spicy, but the spices really are power houses for good health. This makes great leftovers too...and to me, is equally good straight out of the
refrigerator without heating it back up.
You can also use any type of beans: black, adzuki, mung,
lentils…whatever you have on hand or whatever you like best.
